Traditional Polish food is rich in various kinds of meat, especially pork, chicken and beef. Soups are very popular, made with vegetables, broth, beets, and many other ingredients. And the traditional cuisine, that’s the point of this article, includes different kinds of dumplings and noodles – the most notable ones are called “pierogi”.

They have turned food lovers all over the world, who tried them, into their raving fans. But what needs the perfect pierogi? A perfect dough! That’s how you make it.
Basic dough
Ingredients:
- 400g of flour
- 1 egg
- 200ml of water
- 100ml natural yoghurt
- Salt
How you do it:
- Mix flour and warm water with an egg and yoghurt.
- Then roll the dough until it’s flat and cut it into circles using a cup or drinking glass.
And you are already done! Now, you can stuff the dough with different fillings – something for everyone.
Traditional filling
Ingredients:
- 1 kg of scrubbed potatoes
- 2 tablespoons finely minced onion and some oil for frying
- 230 g farmer’s cheese or ricotta
- Salt & pepper
How you do it:
- Boil the potatoes with their peel. Peel and fork blend them.
- Fry the onions with some oil.
- Mix the potatoes, the onion and the cheese. Add salt and pepper.
Now spoon a portion of the filling into the middle of each circle. Fold the dough in half and pinch the edges together. Gather scraps, reroll and fill. Cook the pierogi in salted water until they rise to the surface.
The dumplings may be served with a topping, such as melted butter, sour cream, or fried onions – or a combinations of those ingredients. Smacznego!
