this highly appreciated culinary delicacy that can be found near the town of Buzet in Istria is the main ingredient for this delicious recipe that Jurica Barbalić, our talented chef at the Vienna House Bristol Opatija, recommends this month.
Dish of the month: Istrian pljukanci with beef steak and truffles
Ingredients:
- 100 g Istrian pljukanci (homemade, hand-rolled pasta)
- 80 g beef steak
- 30 g zucchini
- 30 g cherry tomatoes
- 2 g salt
- 2 g pepper
- 60 g truffle salsa
- 5 g butter
- 30 ml cooking cream
- 30 g Grana Padano cheese
- Roasted hazelnuts
Preparation
Stir-fry the beef, zucchini and cherry tomatoes in butter. Deglaze with chicken stock and infuse with cooking cream. Then add the truffle salsa to the prepared sauce. Afterwards, add the cooked pljukanci and continue to cook for a few minutes. Season to taste with salt, pepper and grated Grana Padano. Serve on a plate and decorate with grated truffles and roasted hazelnuts.
